The ancient Greeks used to believe that a healthy mind and a healthy body not only went together, but were both critical for happiness and a successful life. They were also intertwined, meaning that a weakness in either area would affect the other. When I started this transformation I was overweight and full of excuses. And by overweight I don't mean just a few pounds - I weighed over 70 pounds more than I do now. I finally took my life into my own hands and started exercising. At the time, I had no idea where it would lead - to a stronger body, a happier, more nimble mind, and a chest full of race medals. Healthy mind, healthy body, indeed! It hasn't been easy, or without issues, but I wouldn't trade the experience for the world.

Chocolate Flan Cake

This is completely random… and may even be considered anti-fitness. But its really, really good so that’s okay.

Serves: many
Serving size: one or more large slices
Calories: also many
Difficulty: trivial

Ingredients

    Caramel topping
    Premade caramel topping

Cake

    1 box Chocolate Moist Deluxe cake mix
    Whatever else it says on the box

Flan

    3 eggs
    1 can condensed milk
    1/2 can evaporated milk
    2 tsp vanilla

Directions

  1. Preheat oven to 350 degrees F
  2. Spray inside of a Bundt pan with cooking spray
  3. Pour caramel into pan, less than 1/4 of an inch deep
  4. Mix cake batter according to directions, and add it batter to the Bundt pan
  5. Mix all flan ingredients, blending well
  6. Pour flan mixture into the middle of the cake batter, all around the pan
  7. Place the pan on top of an ovenproof dish with a couple of inches of water at the bottom
  8. Bake for 45 minutes to 1 hour, until a knife inserted comes out cleanly
  9. Cool in the pan for 10 minutes, then invert cake onto cake plate
  10. Eat until no cake remains
  11. Repeat until full
  12. Have just one more slice
